Came home tonight to find that my sweet hubby had cooked up Lime Chicken Tacos. YUM!
How did I make this dish FIT into Christmas Crunch? The chicken was perfect (breast, very little oil, onions, spices, peppers, cilantro and lime); the toppings that worked were diced tomato and more fresh lime. I skipped sour cream, cheese and the soft tacos. I was planning on eating the chicken and toppings alone and then it hit me... LETTUCE WRAPS! The flavor was delicious! and the best part was, NO GUILT!
Here are the numbers on 2 small low carb soft wheat tortillas... 160 calories, 4 grams fat, 480 mg sodium, 24 carbs. I ALWAYS eat two tacos.

What a great hubby you have, specially helping with the cooking and dieting. It´s a great way to make tacos. I was bying stuff to make tacos this weekend and it´s the perfect idea, wrapping the up in lettuce.
