Different Sweet Potatoes


Since sweet potatoes are in season (here in Spain) I tried a new recipe and it was tasty - not your typical sweet potatoe sugary recipe.

Oven 400ยบ
2 large sweet potatoes. (peel and cut into 1/2 inch cubes). Place in a baking dish.

Make a simple balsamic vinaigrette: 2 Tbsp. balsamic or plain vinegar. Add 1 tsp. brown sugar, 1/2 tsp. minced garlic, salt and pepper. Mix well and add virgin olive oil (3 to 4 Tbsp.).

Drizzle over the sweet potatoes and toss to coat. Bake for 25 to 30 min. or till tender. (I pulled them out at after about 15 min. and stirred them.) Cool slightly and transfer to a bowl. Check for salt, and if you need to have the "sweet"-sweet potatoe taste, drizzle with some honey. Makes 2 servings. Interesting taste and I´d say not a lot of calories :) Enjoy. Joy

We love sweet potatoes, so this is a great recipe for us. I usually bake them just like I would a white potatoe, then scoop out the center and put a little butter, salt and pepper and sometimes a little sour cream on top...yummy. Your recipe looks delicious, so will try it soon!

I usually bake them too, but my dh just kind of eats them because that is what there is. I made this last night and he said, "wow, this is different, but I like it a lot better than just baked", so I may be onto something :)
Also wanted to tell you Mary that I enjoyed the video about the bell weights (can´t remember what they are called). I´m going to look at one of the stores near our home to see if they carry them. Problem is I don´t need more equipment...just need to use what I have :) Joy
