Tip - Soup recipe to load up on Vitamin A


Since I´m still "out of commission" with this virus, (now attacking my sinuses) my dh decided to go the grocery store for our weekly grocery shopping. I wrote down an abreveation for a vegetable and he mistook it for something else. To make a long story short, I ended up with squash (a lot of it) and cooked it in the pressure cooker. Then stopped to thank the Lord for this mistake, which turned out yummy and is loaded with Vit. A. Just what I needed : )

Recipe for Squash Soup

Cook Squash in a pressure cooker (peel, wash and cut in large chunks...once it is cooked, the seeds and the peeling come off easily). Cook for 10 min. in pressure cooker. How much? This was about the size of a small pumpkin - made about 4 cups of cooked squash. (If you want exact measurements - try googling "squash soup recipe".)

Meanwhile:

In 1 Tbps. of butter, sautee 1 small onion (chopped). Add 1/2 chicken bullion cube. Once squash is cooked, drain and add to onions. Then add 1 to 2 Tbsp. of "light" philadelphia cream cheese and salt to taste. Reserve water where squash was cooked. Puree squash, onions, chicken bullion and cream cheese and add reserved cooking liquid as needed.

Not sure how many calories - but the dose of Vit. A (so necessary when we are sick) had to be huge! and it was yummy too. My dh even liked it : )

Well, I wrote "calaba" on the list, meaning "calabacín" (because we eat that a lot...and only eat squash at Thanksgiving and Christmas meals)
He read "calabaza", which just proves again that men are from Mars and women are from Venus :)

Jajajajaja, it´s true, you have to spell it our right or they´ll get it wrong.
My dh calls me many time when he goes to buy somthing for me, hé is so funny.
But thanks for the recipe, I´ll try it because people are always giving me squash and have to figure out what to do with it, even though I usually make a cream with it.

I remember this!! You put it on Pilar and Deanna´s blog. ;) I love pumpkin soup!!!! It´s the best! and feels so good going down especially when you are sick.

I know you want to be getting up and about. Mommies, pastor wives and teachers aren´t allowed to get sick. ;)

Joy, I just made your soup for lunch. While the rest of the family was eating pizza, I was eating my soup. It tasted great! I printed out the recipe to add to my file. Thanks for sharing it!
