A recipe to use some yogurt!

Now that I gave you a homemade yogurt recipe, here is a recipe to use some of that yogurt! Or use storebought yogurt if you want to save the "good" homemade stuff for just eating - lol :-)

I found this recipe for Tandoori Chicken Tacos at a food blog I read regularly, and tried it tonight for dinner. I did a couple chicken breasts and used half the marinade recipe. I also made some homemade whole wheat tortillas (yes, we can occasionally get whole wheat here - it has to be brought over from Papua New Guinea, and is kind of hard to get, so I don't use it all that often. But this Nix the Fix week is a good excuse to use it more!) to wrap up the grilled chicken, and also made the pineapple salsa she references in her blog post. So try it, I think you'll like it!

Here is the half-batch recipe I made, and I would encourage you to visit Confections of a Foodie Bride to see more of her recipes. She has a lot of desserts but also lots of good healthy main dishes as well!
3/4 c plain yogurt
1/2 cup packed cilantro
2 cloves garlic
1/2 inch piece of peeled ginger
heaping 1/2 teaspoon ground cumin
heaping 1/2 teaspoon ground coriander
1/2 teaspoon salt

Process the ingredients in a blender or food processor and marinade chicken (several breasts cut into pieces is what I did) for several hours. Grill chicken as desired until done. Cut into slices and serve on tortillas with pineapple salsa. Yum!
