Veggies Prepared in Ways You Can Love!


It's no secret that vegetables are the healthiest foods around, packed with vitamins, minerals, antioxidants, phytochemicals, and fiber--and that we need to up our intake for lifelong health and weight control. But the problem is: Far too many people just hate vegetables and refuse even to try to choke them down.
If you're a vegetable hater, listen up! There are ways to make nature's healthiest foods taste delicious. One method is to spice them right. Here's the rundown on which spices work best with certain vegetables and greens:

Broccoli or brussels sprouts: Caraway seeds
( I like parsley and green onions with brussels sprouts.)
Green beans: Tarragon or dill weed
(One of my favorites on green beans is garlic, or lemon rind and oregano)
Spinach: Nutmeg
Squash: Allspice or curry
Tomatoes: Basil, oregano, red pepper, or rosemary
Green, red, or yellow peppers: Thyme

Often the "baby versions" of certain vegetables such as artichokes, turnips, or squash tend to be more flavorful and less bitter.

I Can't Believe It!

I can't believe that I forgot to post on Tuesday!!!!!! It has been a crazy week. However, I saw no change, and started the girl problem... so I didn't even weigh. I was a little disappointed as I have been doing the Jillian for a week, and saw no inches come off.

However,
Hubby and I started the 6-Day Body Makeover on Tuesday. He agreed to do it with me:) This has helped me alot the last few days! It is supposed to get your metabolism started again, if you have been at a plateau for a while. Basically, it is still eating six times a day, but you eat specific foods for your body type. It's just normal foods, with no sugar, salts, oils, dairy, or prepared foods or dressings. A normal day for me is:

B'fast:
3 egg whites
1/2 cup berries or 1/2 grapefruit

Mid-Morning:
3oz. chicken, turkey, or fish
1 cup greens

Lunch:
2 oz chicken, turkey, or fish
1/2 cup brown or wild rice
1 cup vegetables

Mid-Afternoon:
3 oz chicken, turkey, or fish
1 cup greens

Dinner:
2oz. chicken, turkey, or fish
1/2 cup brown or wild rice
1 cup vegetables

PM snack---Not required
1/2 grapefruit or 1/2 cup berries

I have been doing my new Jillian videos for exercise, and can only get through 20 minutes this week(10-15 last week)... not sure how long the videos are, but they are KILLER! I have Shape up the Frontside and Shape up the Backside, and I'm giving the muscles 2 days before doing it again. On the in-between days, I have been walking and jogging fast. I'm sure praying that the Lord will help me get over this plateau. This morning, I weighed less and am also having the girl problem... so I guess that's a good sign. The sugar is what I'm craving!!!! I have been having hot tea with stevia to chase away the cravings. I have some really good tips from the book that I'm going to try to post. I also have been drinking at least 72 oz of water, and more some days. Well, gotta go shower before dinner. Look forward to seeing how you all did last week!

I've been doing a little study on this subject, as many of you know that I haven't been able to lose in the last couple of months. I have been stuck at this weight for almost 4 years, with 2 pregnancies in the 4 years. My body just can't seem to go below!     Mate is another herb that people use for energy and since it has only a small amount of caffeine, it is good for people who are sensitive to caffeine. Most supermarkets sell mate tea, or you can visit your local health foodstore. You can find the tea online as well.

    Ginger, cinnamon and cayenne pepper are all herbs that have a thermogenic effect just like green tea. However, they should only be used in small amounts.     Of course I've been trying the given remedies, like eating small meals 6x's a day, drinking lots of water, exercising, getting 8 hrs sleep....

Wow! It has been a busy couple of weeks here in the cold north! We made it back from the trip to Calgary, then I spent the next week with a MOUND of laundry and school to catch up. We had a big day at church, two days after returning, and then we all came down with a stomach flu:0( Before you know it, it is Sunday again, and we hosted two different sets of company yesterday and today. Needless to say, this has all made it difficult to keep up eating as I should. Oh... I've kept it up alright:)
I kept the exercise steady, until I got the stomach flu. Every day having at least 20 min. of some form of exercise, and 40 if I could get the time. I know it sounds ridiculous, but with four kids under 7, there is a whole lot of training going on at my house. From the time we wake up, until the time we go to bed. This should count for some form of mental exercise. haha! Now that I'm feeling back to normal, I'm going to try and pick up the exercise again tomorrow.

Here are my new measurements for this week.... whew! I almost didn't make it:)
Weight: 202 -2 lbs. Weighed today!

These measurements were taken before the flu:
Right Arm 14 1/2 in. -1/2 in.
Left Arm 14 1/2 in. -1/2 in.
Waist 36 1/2 same
Hips 47 same
Chest 41 3/4 -1/2 in.
Right Leg 24 3/4 -1/4 in.
Left Leg 24 3/4 -1/4 in.

Total Loss= 2lbs and 2 inches

My mom just sent me 2 Jillian workouts for Valentines. I just got them in the mail today, and am so excited to try them this week. Come on off inches!

Going Out of Town....

Well, just wanted to let you all know that I'll be out of town for our Wednesday weigh-in. I really hate to miss it, and think that I've dropped a few pounds:) I was going to weigh before leaving, but decided to wait until I get back. That will hopefully help motivate me on the journey. We are going to Calgary to get our children's US passports renewed and also to get our youngest dual citizenship, as she is Canadian. Please pray that all of this paperwork will go smoothly, and that I will control myself as we eat out EVERY day. Eating out is so exciting for us.... because we hardly ever eat out. I'm thinking small portions. I also made sure that the motel has a workout room... fully renovated. I'm so excited about changing up the routine abit and using different machines (only have an exercise bike). Can't wait to see your results when I return! Have a wonderful week making healthy choices!

Testimony-Kristy


Hi Ladies,
I'm back for another challenge, and so excited to work hard. Thanks Dani Joy for getting us together. You have been an encouragement to us all!

I have had a weight struggle all my life. Sometimes I joke and say....."I was born a size 12". That is the size that I was all through high school and college. Well, ten years and four kids later(plus a miscarriage, deputation, moving to a new country, then moving again to a new city in a new country, starting a new church, and a busy life with 4 wonderful kids under 7) I'm in a size 14-16. Oh, to see those 12's again! I have lost 30lbs, but still have 34lbs to go. This will be what I weighed when we got married(9 1/2 yrs ago). That is my goal. Now, I don't think that I can lose all 34 during this challenge. In fact, my weight has been at a stand-still for a while now. I try to eat healthy, but no pounds come off. I'm praying that the Lord will help and guide me each day to the right food choices. It's going to take His strength. My strength always fails me! This picture was taken a few hours ago... after dinner and on the first day of the "Girl Problem".... YIKES!

I usually tell NOBODY my weight, and didn't on the last challenge. This time I'm going to take the plunge and tell you ladies so that you can hold me accountable.

Ha! Ha! This is how I go out... with a sweater and sucking in:)

Weight: 204lbs-Girl Problem came today-so hopefully I'll have a loss next week!
Left Arm: 15"

I have been eating like a diabetic 6 times a day. I am not a diabetic, however, this is how the other 30lbs. came off. I am trying not to have sugar, except when feeling sick. Sometimes I feel really funny, so I have been sucking on a piece of hard candy. That seems to help. It will be just eating healthy, drinking lots of water, and exercising for my plan. I don't like fad diets or pills! ...Might try the "Making the Cut" thing--if I can find the book. My family and I are missionaries to Canada, btw. I'm excited about being healthy and having more energy to serve the Lord and take care of my family.

Hangin' In There

Hey Ladies,
It's been forever since I've had time at the computer. Seems that the kids and I are struggling to push through the last weeks of school before the break( just one more week). I don't know what it is, but as soon as those decorations come out, it's harder to school. They get really excited:0)

As far as cruchin' goes. I've been a loser lately, and not the biggest loser either! The girl problem arrived around US Thanksgiving, and that sent me for a loop:( Chocolate!!!!! I'm over it now, but have been trying to keep the exercise up. If I exercise at night, then I can't get to sleep for hours! Trust me, I need my sleep to take care of 4 kids under 7:) The mornings have not been good lately.... It doesn't get light here till about 9am. I aim to get up at 6:50 to get dressed, do Bible reading, and start school. It seems that I just can't get up any earlier. Sob story... I know! These days, I literally go from 6:50am until 9pm without sitting down. That is leaving NO time for exercise. I really have to MAKE it happen. That often means making kids play or do it with me, and forgetting about the house work and million other things that need done.

Good new is... We had a fellowship last Sunday night at church, and I dove (not really) for the veggie tray. I had many veggies, 2 small sandwiches(1/4's), and 1/2 of a piece of dessert. I followed my Christmas tips, and saved at least 200 calories by drinking water:) I also picked my favorite dessert there, and cut the piece in half. This was very satisfying to me. I'm hangin' in there, and trying to maintain. That is my new goal for December... to maintain and exercise.

TOSSING AND TURNING WITH ANTICIPATION,

SO, I RACED TO THE KITCHEN, FLUNG OPEN THE DOOR,
AND GAZED AT THE FRIDGE, FULL OF GOODIES GALORE.

I FELT MYSELF SWELLING SO PLUMP AND SO ROUND,
'TIL ALL OF A SUDDEN, I ROSE OFF THE GROUND.

I CRASHED THROUGH THE CEILING, FLOATING INTO THE SKY,
WITH A MOUTHFUL OF PUDDING AND A HANDFUL OF PIE.
BUT, I MANAGED TO YELL AS I SOARED PAST THE TREES....

Kristy-Crunch In


Yeah!!! 2 1/2 more inches off! I really worked the arms in the last two weeks, and lost 1/2 inch on each arm, another 1/2 inch off the waist, 1/2 inch off the chest, and another 1/2 inch off the hips. I was really happy about the arms, cause I haven't seen any loss there. Scale still doesn't move!! I do admit the eating needs to be better. The first two weeks the eating was strict, and when there was no change in the scale is seemed so hard to keep that up. I'm gonna try harder with the food in the next week. I'm hopin' that when my body build up more muscle-that the scale will start moving:)

This brings my total inches lost up to 11 1/2!

Tuesday Crunchin'

Today was a busy day with school and music lessons. Hubby went hunting this morning and got a deer! Yeah! This will be good, healthy meat for our family. Thank the Lord for His provision in our lives:)

Just got in exercise tonight after the kiddos went to bed. It was 50 minutes of walking with Leslie Sansome and 10 minute pilates burst. That walking got me sweatin' and crunchin' tonight! It was 3 miles with weights and was fast. Well, I'm off to bed right after I post a little more humor... this time Thanksgiving:) I really need humor lately!

In the Christmas Crunchin' Spirit!

I know... your probably saying, "What is wrong with that girl in Canada? We haven't even had Thanksgiving yet!" Well, we have Thanksgiving the second week of October in Canada. It is actually a much better set-up, so that the eating spreads out abit... hopefully not behind you:), and you have a whole two and a half months before Christmas arrives.

I'm not really a Santa enthusiast. At our house we try to focus on the true meaning of Christmas-the birth of our Saviour. Our kids are the ones walking down the mall, passing the huge line-up of children, and saying very loudly...."He's not real!" However, I thought this was funny:) Hope you enjoy!



Kristy-Crunch IN

Well ladies, I just finished 30 minutes of walking and joggin' and 20 minutes of pilates. Getting it in, but right at bedtime:) Yesterday was my day of rest, as it was Sunday... and boy was I glad that I rested, after Nina's post!
I did take a new picture of myself, but figure I'll save it for Wednesday. I don't like my picture taken very often. Hubby says that my body is more toned, and he can tell a change-even though something is wrong with the scale!:)

Game Plan Tips for Christmas Parties

These are some ideas that I have come up with to try to keep those
Christmas Party goodies under control!

Tell me what you think... and add more to the list to
encourage each of us.

  1. Maybe try eating an apple and drinking alot of water before we go. Apples take a long time to eat, have fiber, and are filling. At least we won't go in starving, and can keep a better control on our hunger pains.
  2. Try to eat really healthy the rest of the day. If the party is at night... don't sabotage the morning or vise versa. Also, try to get exercise in even on those busy days. Some is better than none-I'm reminding myself:)
  3. If it is pot-luck style gathering, bring something healthy.
  4. Drink water.... not punch or pop. This will save at least 100 calories for an 8oz coke! Whoa! I also added up the calories for ginger ale mixed with cranberry juice... this is a popular Christmas punch here in Canada. It will give you 113 calories for ONE 8 oz glass. Hot tea or coffee is safe if you can add your own sugar, or an even better idea is to buy small packets of stevia, splenda, or equal to keep in our purse.
  5. Fill our plates FIRST with the veggies or fruits that are at the party. This will give us very little room for other higher calorie stuff. DON'T make a 2nd trip, unless it's for more of those raw veggies:) Avoid those dipping sauces though:)
  6. Maybe choose ONE small dessert to enjoy.
  7. Try to focus on the joy of the season, the birth of our Saviour, and enjoying family and friends... rather than the food. I'm talking to myself!

Just Crunchin' In!

Thank you to those you that prayed that I would get up early on Friday. The Lord helped me, as I woke up promptly when the alarm went off, and had to get rid of ALL the water I drank the night before:) I was able to get in a 30 walk video, with not much energy, I have to admit.

Today I managed to walk and jog 30 minutes, and do a 10 minute pilates burst. I am having trouble with my eating. Since I haven't seen results, except inches, it is easy to loosen up. It is so encouraging to see the scale move! Well, I just haven't had that encouragement:( However, I'm still trying.... and, already trying to get a game plan for all the Christmas festivities which seem to have already started:)

Crunch In-Kristy

Well, yesterday I was too discouraged to post. No change in the scale, and I felt that the inches were so minimal that I would just wait until next week. The Lord helped me tonight. After the kids went to bed, I did a 35 walk and jog by Leslie Sansome. I sure didn't want to do it, but she is almost like a friend that encourages you:) I'm really trying to work my arms every other day with small weights... that is where I have seen no inches lost. So, I got 5 minutes of arm weights to make a full 40min. I have also been really watching my portions, but not getting enough water during the busy day. Gonna work harder at that:)
Tomorrow should be really busy, so for those that are on here Friday morning... pray the Lord will help me drag myself out of bed at 6am.
I have not commented on each post, but am trying to catch up. You ladies are doing so good, and I'm so excited to hear of your progress!

Maxine and God...


After starting a new diet, I altered my drive to work to avoid passing my favorite bakery. I
accidentally drove by the bakery this morning and as I approached, there in the window were a host
of goodies. I felt this was no accident, so I prayed ... 'Lord, it's up to you, if you want me to
have any of those delicious goodies, create a parking place for me directly in front of the
bakery.' And sure enough, on the eighth time around the block, there it was!
God is so Good !

Thought this was so funny... have you ever felt this way?

Crunchin' as a Family in Alberta, Canada!


Out for a family hike today. The toque (toboggan in southern talk) is not very becoming:)
It was chilly out, and harder to breathe at higher elevations. Our town sits 3,000 ft above sea level, and we were much higher than that. This is just about 10 minutes from our house, and we were doing some scouting for animals, as my husband is trying to hunt some meat for the winter. We packed a picnic lunch (tuna on thinly sliced bread and veggies for me) and had a nice time, until the babies got tired. Sure wish you could have seen those mountains-they are amazing.
We were out about 2 hours and 20 minutes, but took a break for lunch.... so I'm only counting and 1 1/2 hours of exercise.

Crunch In

Yeah, yeah... I'm still here. Not doing so well, I have to admit:( Yesterday, I just felt bad all day, and laid down for a nap in the afternoon. Big mistake, because it caused me to miss my exercise.

Today, I made sure to get in 35 minutes of step aerobics and about 10 minutes on the trampoline with my son. I have not done so well with the eating. Somehow, if I don't have something prepared ahead, I usually mess up. So, I'm gonna make some light tuna salad and keep in the fridge. The first two weeks, I made sure to have a lean protein on hand, however this week seems to have gotten busy.

You ladies really encourage me! Keep it up!

Don't know much about Dr. Phil... We have been out of the US for 3 years, and we don't have cable or local channels, only videos. So if he's bad, I wouldn't know???
