Veggie Omelet

Here's what I had for breakfast this morning:

Veggie Omelet

1/8 Tablespoon Extra Virgin Olive Oil
1/4 c bean sprouts
1/8 cup red bell pepper cut into thin strips
1/8 cup carrot cut into thin strips
1 egg

Heat pan with olive oil on medium heat. Add the vegetables and a little salt. Cook to desired tenderness.

In a skillet spray lightly with Pam then heat on medium heat. Beat egg and pour in skillet. Swirl the egg around in the pan to cover bottom. When egg is set add the vegetables and fold in half. When cooked to desired doneness, place on serving plate.

Omelet alone is 107 calories

What I had for breakfast this morning:

Veggie Omelet
multigrain toast plus Omega 3
preserves (reduced sugar)
coffee with a little creamer
orange juice

Total calories for breakfast: 407
