Did You "Chickpea" Today?

Known only here in Spain as garbanzos, and not the most favorite food in my household, they are made fun of and warned against by my guys. So, when I told them we were having "chickpeas", they laughed and thought I was referring to something else!

I am constantly trying to find new ways to fix them, add them, mash them, or even eat them plain. These little nut like creations of our incredible Maker are exactly what our body needs to stay healthy.

How in the world do you cook a chickpea anyway?

Well, I had no idea before I came to Spain. Really, I probably didn´t even know what they were. I have been learning how to cook them for a couple of years now and, I like this last recipe the best out of all the ones I have tried. I added ham because, if the guys don´t see meat they think the meal is incomplete.

Moroccan-spiced Chickpea Carrot Soup


Ingredients: 
2 tbsp olive oil 
1 small onion, diced
4 medium carrots, chopped small
1 large clove (or 2 small) garlic
1/4 tsp cumin
1/4 tsp coriander
1/4 tsp cinnamon
1/8 tsp tumeric
1/8 tsp paprika 
1/8 tsp ginger 
pinch saffron (if you have it, can be omitted)
1 can chickpeas (or 2 cups cooked), rinsed 
1 medium vine ripe tomato, chopped 
1 tsp sea salt, more to taste 
black pepper, to taste
1 tablespoon fresh squeezed lemon juice
3 cups water 
small handful almonds, chopped
2 tbsp fresh cilantro, chopped
1. Heat the oil on medium heat. Add onion and cook until translucent. Add carrot and continue cooking until softened, stirring occasionally. Add garlic and stir, cook for one minute. Add all spices and “toast” for 1-2 minutes.
2. Add tomato and chickpeas, stir to mix with onion and spice mixture. Add salt, black pepper to taste and lemon juice. Stir well and pour in water.
3. Bring water to a boil, reduce heat and simmer partially covered 20-30 minutes. Season to taste. Top with a sprinkle of almond and fresh cilantro. Serve hot.

I trippled the batch, added more water (because I used raw dried beans soaked overnight) and didn´t use the almonds. It lasted our family of 5 for two big meals. The second meal we served it over rice. It was a complete meal. Very filling!

What Do You Do, Anyway?


Maybe, some of you are wondering, 

"What do you do on that Christmas Crunch Challenge, anyway?" 

I know that it can be difficult to get started. It takes baby steps, little changes at a time, but never turning back. Even if you cheat a little on the weekends, don´t let go. Don´t give in. 

I made a life style change 5 years ago. I eat healthier, but there are days, I cheat. I eat whatever I want. I don´t believe in diets. They blow up in your face. They make me rebel. So I invented the Christmas Crunch Challenge, to challenge ladies to have good healthy disciplines in their lives. Healthy eating, fitness, and good spiritual encouragement. Check it out HERE. We just got started!

This is what I ate today for my big meal of the day. My own creation. I just had to share it.


Sauteéd Chicken, onions and peppers over a bed of spinach with tomatoes, Spanish blue cheese, and a little bit of italian oil for flavor. It almost filled my plate! And the best salad ever! You gotta try it!

Breakfast was two pieces of whole wheat no sugar added toast with queso fresco (like cottage cheese but smooth) and the other piece with sf peanut butter with a little honey. It is very important to get some protein in the morning too.

I had green tea and some high fiber chocolate no sugar added cookies for snack.

For dinner I had an egg with a salad on the side with more cheese. I am a big cheese eater!

This is what I did for my workout tonight.



And I am not going to bed hungry!

Very easy diuretic soup

Hi, some of you who are trying to lose more weight may be interested in this recipe. It is easy and helps naturally with water retention. You will need:
1 sweet onion
3 or 4 stalks of celery
1/2 handful fresh parsley
lemons
2 1/2 liters of water (1/2 gallon and 2-3 cups)
Peel and cut the onion in big chunks, boil onion, celery, and parsley for 20-25 minutes. Pour in a strainer and put the veggies away. Your soup is ready. 30 minutes before lunch and supper, get a cup of the soup (lukewarm) and add the juice of half lemon. Drink! You can do this for 3 or 4 days and after a couple of weeks do it again. The soup can be kept in the fridge, you just warm it up a bit before drinking it. It is actually pretty good =)

Almond milk

I want to get 1 extra point today, so I am posting =) Almond milk is delicious and good for you, and it is not difficult to do you own. I love a good" almond milk-banana-blueberries/strawberries/raspberries-flaxseed" smoothie. 


Homemade Vanilla Cinnamon Almond Milk
Yield: 3.5 cups
Ingredients:
  • 1 cup raw almonds, soaked in water
  • 3.5 cups filtered water
  • 2-4 pitted dates
  • 1 whole vanilla bean, chopped (or 1/2-1 tsp vanilla extract)
  • 1/4 tsp cinnamon
  • small pinch of fine grain sea salt, to enhance the flavour

1. Place almonds in a bowl and cover with water. It’s preferred to soak them overnight (for 8-12 hours) in the water, but you can get away with soaking for 1-2 hours in a pinch.
2. Rinse and drain the almonds and place into a blender along with filtered water, pitted dates, and chopped vanilla bean.
3. Blend on highest speed for 1 minute or so.
4. Place a nut milk bag over a large bowl and slowly pour the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk. 
5. Rinse out blender and pour the milk back in. Add the cinnamon and pinch of sea salt and blend on low to combine. Pour into a glass jar to store in the fridge for up to 3-5 days. Shake jar very well before using as the mixture separates when sitting. If your dates or vanilla bean are dry/stiff, soak in water to soften before use.

Cucumber sandwich

Hello, the first day of the challenge was a success, some beginnings are easy. I do love veggies and want to share a delicious snack that I have tried lately: cucumber sandwich. You can get the regular big cucumber or the small english cucumbers, slice it lengthwise and fill it with cream cheese, ham, turkey, smoked salmon, the possibilities are endless...zero carbs yet you get the crunchiness. Sprinkle some salt and pepper to make it tastier...mmmm...easy, healthy and good!

SPINACH!!!!!


This is my new favorite food - SPINACH!!!! 
Low in calories, low carb, low sugar! 

I use spinach instead of pasta, or any other kind of filler. It is filling and full of fiber. Add some low carb dressing, mushrooms and any kind of meat. It is a perfect meal! 

Go ahead, I dare you, eat your fill in Spinach!!!

My Healthy Breakfast Casserole

I'd like to share the recipe to a breakfast casserole I made this past Saturday. I had people over for breakfast and wanted to make something I could eat too. I looked for recipes, but did not like them entirely. So I made my own. I had some left over baked potatoes, so I sliced them and put them at the bottom (instead of the bread most of them asked for. Then I used a yoghurt dip I had made out of plain yoghurt and onion spices (that was in place of the milk or cream). I used a packaged of boiled bacon I buy at Lidl (Canadian bacon).  I added 8 beaten eggs (with salt and pepper) and mixed it all up. I topped it with grated cheese (four cheese and mozzarella), and then I remembered I had some mushrooms, so I sliced them thinly over top. It looked really good.

It was very good. It did taste "healthy". I guess regular bacon would have given it a more "fatty" taste, or maybe adding butter. But I enjoyed it very much. It would be good to eat for lunch or dinner as well.

Low carb Cream Cheese Pancakes

I found these the other day and could't wait to make them. Made them tonight and ate them all myself! Sooo good!


Serves: 1, Yields: about four 6″, thin pancakes/crepes

Ingredients:

  • 2 oz. cream cheese (I used the 1/3 less fat – would recommend this or full fat
  • 2 large eggs
  • 1/2 tsp cinnamon
  • 1 tbsp butter
  • 1 packet stevia or other sweetener


Only 4 ingredients for the batter… eggs, sweetener, cinnamon, & cream cheese.

Directions:
Combine all ingredients (except butter) in a medium bowl & blend using an immersion blender.  If you don’t own an immersion blender you can use a blender or food processor too.

The batter after using the immersion blender…. it’ll be bubbly, so just let it settle a little.
The batter will be really bubbly when you’re first blending it, so just let it sit for a minute or two so some of the bubbles settle (some small ones will still remain).
Place about a half tbsp of butter onto a hot griddle (or use non-stick spray) & pour about 1/4 of the batter onto the griddle, letting it cook for about a minute or so.  Peek under & if it’s browning, flip it over & do the same on the other side, which will probably take a bit less time to cook.  Just keep repeating the process until all the pancakes are cooked.  Stack & then top with the remaining butter.  Dig in & enjoy!!
Nutrition: 383 calories, 33g fat, 16g protein, 3g carbs, 1.5g fiber (1.5 net carbs)

Recipe for Whole Wheat Honey Rolls

A recipe for these days of no sugar/no white flour

Whole Wheat Honey Rolls (makes 12 good-sized dinner rolls)
1 package active dry yeast
1 cup warm buttermilk (or 1 cup warm water, add 1/3 cup milk powder later)
1/4 cup oil
3 tablespoons honey
1 1/2 cups whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
3/4 to 1 1/4 cups all-purpose flour
In a large bowl, dissolve yeast in milk. Add the oil, honey, whole wheat flour, salt, and baking soda. Beat until smooth. Stir in enough all-purpose flour to form a soft dough. Knead until smooth. Let rise until double, about 1 hour.
Shape into 12 rolls, let rise on baking sheet about 30 minutes.
Bake at 400F for 12 minutes. Brush with margarine or butter while still warm.

I made a batch of these today and enjoyed one with scrambled eggs for dinner. I know it has a bit of white flour but since I have to make all of my own bread (we can only buy plain white bread at the store. In fact our whole wheat flour has to be imported from Papua New Guinea, across the border!) this is about as close as I can get to eating whole wheat bread.

Pineapple Chicken - Super easy and quick to prep low fat meal

2 lbs/1 kg skinless chicken pieces

1 can (14 oz/398 mL) unsweetened pineapple chunks.

 
1 tsp dried rosemary

1/2 tsp paprika

1/2 tsp salt

1/4 tsp pepper

1/4 tsp ground ginger

Place the chicken in a baking dish.

Drain the can of pineapple, pour the chunks over the chicken.

Combine the rosemary, paprika, salt, pepper and ginger, sprinkle this over the chicken.

Bake, covered, for one hour at 375F/190C, or until the chicken is no longer pink in the middle.


Serve with rice and lots of veggies.

# tip: I used whole chicken breasts but next time will slice them thinner so the flavour goes

all the way through the meat.

You'll Love This Lasagna

Pasta doesn't have to be unhealthy — this low-fat lasagna recipe brings a whole lot of flavor for very little calorie count. Don't worry, it's still cheesy, delicious, and filled with onions, spinach, and mushrooms. Think of it as restaurant style, without all of the fat! If you can, use whole-wheat pasta to make this healthy recipe even healthier! Low-Fat Vegetable Lasagna
Ingredients
  • 9 lasagna noodles, uncooked
  • 1 medium yellow onion, chopped
  • 1 teaspoon vegetable oil
  • 2 cloves garlic, crushed
  • 8 ounces mushrooms, sliced thin (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 tablespoon salt
  • 1 (10 oz.) package frozen spinach, thawed, drained thoroughly
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 cups meatless tomato sauce
  • 15 ounces low-fat ricotta cheese
  • 3/4 cup shredded part-skim mozzarella cheese
  • 2 tablespoon grated Parmesan cheese
Preparation
Prepare pasta according to package directions; drain and cover with cool water until ready to use.
While pasta is cooking, combine onions and oil in a skillet over medium heat until golden, about 5 minutes. Add the garlic and cook about 1 minute. Spoon out half the onions and reserve for later. Add the mushrooms (if using) to the onions in the skillet. Cook, stirring over medium heat, until the mushrooms are tender and slightly browned, about 7 minutes. Add the parsley and a pinch of salt; transfer to a bowl.
Add the reserved cooked onion and the spinach to the skillet. Cover and cook over medium heat until the spinach is wilted, about 3 minutes. Uncover and cook over medium heat to evaporate any excess moisture, about 1 minute. Season with a pinch of salt.
Heat oven to 350° F. Drain the lasagna and pat dry with paper towels. Mix the oregano and basil with the tomato sauce. Spread 1 cup tomato sauce in the bottom of a 13 x 9 x 3-inch pan. Arrange 3 lasagna pieces, slightly overlapping, in the pan. Spoon the spinach mixture on top in an even layer. Spread with half of the ricotta. Sprinkle with 1/4 cup of the shredded mozzarella cheese.
Arrange a layer of 3 more lasagna pieces. Spread with the mushrooms, the remaining ricotta mixture, and 1/4 cup of the mozzarella. Top with the remaining 3 pieces of lasagna, 1 cup of tomato sauce and 1/2 cup of the mozzarella cheese. Sprinkle with Parmesan cheese. Bake until brown and bubbly, about 45 minutes.

Red cabbage

Would you like to eat more cabbage and can't figure out another way? Someone gave me this recipe and I really enjoy it. I have modified it to be really light; the original has whipping cream.
Shred some cabbage; add fat free, sugar free pineapple yogurt, cut up canned pineapple and chopped walnuts. Mix well and enjoy. You can make with more or less cabbage. It's really crunchy and you forget you're eating cabbage.

Oatmeal -- Best food value around



When it comes to breakfast, this is one of the best food values around. You can make this recipe in big batches and eat it throughout the week. This is the Master recipe and I will give you also the healthy one.

Oatmeal: MASTER RECIPE

3 cups old fashioned oatmeal (not instant)
3 cups of skim milk
1\2 cup of brown sugar
1\2 cup of dried dates (chopped)
1\2 cup of currants or raisins
1\2 tsp. of salt

Combine the oatmeal,milk, and 4 cups of water in a large deep saucepan and bring to a boil over medium-high heat. When it boils quickly turn down to very low. Stir in the brown sugar, dried fruits, and salt and cook at a low simmer for 15 to 20 min. or until very thick and creamy. Stir often to prevent the bottom from scorching.
Serve with additional milk, or cool and refrigerate to reheat later in the week.
Serves 8. You can do all kinds of things to this recipe like adding bananas, apples nuts etc.

Healthy version:

SWAP
1\2 cup honey for the brown sugar
1 cup of craisins(dried cranberries) for the dates and currants

ADD
1\2 cup flaxseed meal
1\2 cup toasted, unsalted sunflower seeds
1\2 cup Grape-Nuts cereal
Follow the directions for the Master recipe stirring in the flaxseed meal, sunflower seeds and craisins. Serve with additional milk and sprinkle on top the Grape-Nuts if desired.

My kids like it and even my 2 year old grandson.

HUEVOS CON SALSA DE ANCHOAS

Preparación: 15 min.
Dificultad: Baja

INGREDIENTES:

4 huevos
1 latita de anchoas
1 cucharada de cacahuetes picados
2 cucharadas de mayonesa light
1 cucharada de perejil picado



PREPARACION:

Cocer los huevos 10 minutos, pelarlos y cortarlos por la mitad a lo largo. Sacar las yemas y dejarlas en un bol aparte .


Escurrir bien las anchoas, reservar 4 para decorar y picar fino las demás. Añadirlas a las yemas y mezclarlas con un tenedor hasta obtener una pasta. Incorporar a la salsa la mayonesa, los cacahuetes y el perejil, y remover bien.


Rellenar los huevos con la salsa de anchoas y decorarlos con medio filetito de anchoa cada uno. Se sirve a temperatura ambiente, con una guarnición de lechuga picada o unas tiras de pimiento asado.


Nota:
Procurar que los huevos sean frescos, para que la yema quede más o menos centrada en su clara.

PECHUGA DE PAVO RELLENA

INGREDIENTES:

1 Pechuga grande de pavo abierta
1 Calabacín
1 Pimiento verde
1 Pimiento rojo
1 Cebolla
1 Diente de ajo
4 Cucharadas aceite oliva
Sal
Pimienta
Orégano y perejil


PREPARACION:

Cortar el calabacín en cuadraditos pequeños y cortar los dos pimientos en tiras finas. Pelar y picar la cebolla. Con un cuchillo afilado, abrir la pechuga por la mitad (como intentando obtener un único filete grande).

En una sartén calentar tres cucharadas de aceite y rehogar la cebolla picada. A continuación añadir las verduritas cortadas, salpimentar y sofreír hasta que estén blanditas.

En un mortero, majar el ajo con el orégano, el perejil y la cucharada de aceite que sobra.

Extender la pechuga de pavo, salpimentarla, cubrirla con la mezcla de hierbas aromáticas de mortero, y a continuación con las verduritas sofritas. Enrollarla y atar con hilo de bramante.

Dorar la pechuga rellena en una sartén y asar luego durante 30 minutos en el horno previamente precalentado a 180º.

Cortar en rodajas gruesas y servir con la salsa que ha ido soltando el asado.

Resurrection Cookies

This is not a real "diet" recipe as it is a lot of sugar (although since it is only egg white at least you don't have the cholesterol or fat). I translated this and gave it out to some of the moms at my kids' school with all the scripture written out. Kind of like a tract. :-) I'll copy and paste that at the end of this for our Spanish ladies.

~Also known as Easter Story Cookies~

This is a great recipe to teach your Children the REAL story of Easter. That the Lord Jesus Christ
our Savior is not dead but has Risen. We serve a Risen Savior......

This activity can be done as a "family" or for Sunday School. Of course the Sunday School option might
be to hand it out to the class with a note to the parents. Grandparents might considering
doing this with their grandchildren this year too!!!

So Grab your Apron and Let's Get Started!!!!!!!

You will need:
1 cup whole pecans
1 teaspoon vinegar
3 egg whites
a pinch salt
1 cup sugar
a zipper baggy
1 wooden spoon
scotch tape
Bible

Instructions:
These are to be made the evening before Easter. Preheat oven to 300F.
*** (this is very important --- don't wait until you are half done with the recipe).
Place pecans in zipper baggy and let children beat them with the wooden spoon
to break into small pieces. Explain that after Jesus was arrested. He
was beaten by the Roman soldiers. Read: John 19:1-3

Let each child smell the vinegar. Put 1 teaspoon vinegar into mixing bowl.
Explain that when Jesus was thirsty on the cross He was given vinegar
to drink. Read: John 19:28-30

Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life
to give us life. Read: John 10:10&11

Sprinkle a little salt into each child's hand. Let them taste it and brush the rest
into the bowl. Explain that this represents the salty tears shed by Jesus' followers,
and the bitterness of our own sin. Read: Luke 23:27

So far the ingredients are not very appetizing. Add 1 cup sugar. Explain that the
sweetest part of the story is that Jesus died because He loves us. He wants us to
know and belong to Him. Read: Psalm 34:8 and John 3:16

Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed.
Explain that the color white represents the purity in God's eyes of those whose sins
have been cleansed by Jesus. Read: Isaiah 1:18 and John 3:1-3

Fold in broken nuts. Drop by teaspoon onto waxed paper covered cookie sheet.
Explain that each mound represents the rocky tomb where Jesus' body was laid.
Read: Matthew 27:57-60

Put the cookie sheet in the oven, close the door and turn the oven OFF.

Give each child a piece of tape and seal the oven door.
Explain that Jesus' tomb was sealed. Read: Matthew 27:65-66

GO TO BED!

Explain that they may feel sad to leave the cookies in the oven overnight.
Jesus' followers were in despair when the tomb was sealed. Read: John 16:20&22

On Resurrection Sunday (Easter) morning, open the oven and give everyone a cookie. Notice the cracked
surface and take a bite. The cookies are hollow! On the first Easter Jesus' followers were amazed
to find the tomb open and empty. Read: Matthew 28:1-9

Galletas de la Resurrección


Esta receta es una buena manera de enseñar a tus hijos la historia REAL de la Pascua. El Señor JesuCristo no está muerto, sino que ha resucitado. Es nuestro Salvador y está vivo.


Ingredientes:


50 gramos nueces

1 cucharadita de vinagre

3 claras de huevo

una pizca de sal

1 taza (aprox. 200 gramos) de azucar


Prepara estas galletas la noche antes del domingo de la Resurrección. Precalentar el horno a 180 grados. ****( Es muy importante hacer esto. No esperes hasta despues de mezclar los ingredientes.) Poner las nueces en una bolsa pequeña. Golpear con un s cucharra de madera. Explicar a los niños que dispues de estar arrestado, Jesús fue golpeado y azotado por los soldados Romanos.

Juan 19:1-3 Así que, entonces tomó Pilato a Jesús, y le azotó. Y los soldados entretejieron una corona de espinas, y la pusieron sobre su cabeza, y le vistieron con un manto de púrpura; y le decían: !!Salve, Rey de los judíos! y le daban de bofetadas.


Dejar a cada niño oler el vinagre. Poner una cucharadita de vinagre en un bol. Explicar que cuando Jesús estaba en la cruz tenía sed y le dieron vinagre para beber.

Poner un poquito de sal en la mano de cada niño. Dejarle probarlo. Luego poner una pizca de sal en el bol con el vinagre. El sal representa las lagrimas saladas de Jesús cuando lloró en la cruz y la amargura de nuestro pecado. Lucas 23:27 Y le seguía gran multitud del pueblo, y de mujeres que lloraban y hacían lamentación por él.


Hasta ahora los ingredientes no tienen buena pinta. Añadir el azucar. Explicar que lo más dulce de la historia de la resurrección es que Cristo murió porque nos ama. Batir bien con batidora entre 12 a 15 minutos o hasta que quedan puntos de la mezcla que guardan su forma al levantar la batidora. Explicar que el color blanco representa la pureza en los ojos de Dios de todos que han sido limpiado por Jesús. Añadir con cuidado los nueces a la mezcla. Poner papel del horno encima de una bandeja para horno. Hacer las galletas dejando pequeñas montonitos de la mezcla por encima de la bandeja. Explicar que cada montonita representa la tumba donde se puso el cuerpo de Jesús. Entonces Pilato mandó que se le diese el cuerpo. IRSE A LA CAMA A DORMIR.

Explicar que quizas se sienten ellos tristes a dejar las galletas en el horno toda la noche. Los seguidores de Cristo estaban desesperados cuando la tumba estaba sellada.

Juan 16:20, 22 De cierto, de cierto os digo, que vosotros lloraréis y lamentaréis, y el mundo se alegrará; pero aunque vosotros estéis tristes, vuestra tristeza se convertirá en gozo. También vosotros ahora tenéis tristeza; pero os volveré a ver, y se gozará vuestro corazón, y nadie os quitará vuestro gozo.

Por la mañana (el Domingo de la Resurrección), abrir el horno y dar una galleta a cada uno. Tomar un bocado. Las galletas son huecas por dentro. Los seguidores de Jesús estaban sorprendidos al encontrar la tumba abierta y vacía. Mateo 28:1-9 Pasado el día de reposo, al amanecer del primer día de la semana, vinieron María Magdalena y la otra María, a ver el sepulcro. Y hubo un gran terremoto; porque un ángel del Señor, descendiendo del cielo y llegando, removió la piedra, y se sentó sobre ella. Su aspecto era como un relámpago, y su vestido blanco como la nieve. Y de miedo de él los guardas temblaron y se quedaron como muertos. Mas el ángel, respondiendo, dijo a las mujeres: No temáis vosotras; porque yo sé que buscáis a Jesús, el que fue crucificado. No está aquí, pues ha resucitado, como dijo. Venid, ved el lugar donde fue puesto el Señor. E id pronto y decid a sus discípulos que ha resucitado de los muertos, y he aquí va delante de vosotros a Galilea; allí le veréis. He aquí, os lo he dicho. Entonces ellas, saliendo del sepulcro con temor y gran gozo, fueron corriendo a dar las nuevas a sus discípulos. Y mientras iban a dar las nuevas a los discípulos, he aquí, Jesús les salió al encuentro, diciendo: !Salve! Y ellas, acercándose, abrazaron sus pies, y le adoraron.
