Greek Salad and Dressing

•4 cups hearts of Romaine lettuce (sliced thinly)
•1 cup spinach
•½ cup mixed greens
•½ cup red bell pepper (sliced thinly and then diced fine)
•½ cup cherry tomatoes (halved)
•½ cup cucumber (diced)
•½ cup sweet onion (diced)
•¼ cup Kalamata olives (pitted and sliced fine)
•¼ cup parsley (chopped fine)
•1/8 cup basil leaves (chopped fine)
Prepare all ingredients and toss in a large bowl.

Greek Salad Dressing:
•⅓ cup extra virgin olive oil or flaxseed oil
•⅓ cup fresh lemon juice
•½ teaspoon apple cider vinegar
•1 Tablespoon raw unfiltered honey
•¼ cup fresh oregano or basil leaves
•¼ medium tomato
•1 Tablespoon red onion
•2 garlic cloves, peeled
•Pinch of cayenne
•½ teaspoon Celtic sea salt (optional)
Prepare all ingredients and place into Vita Mix or other blender and process until creamy. Enjoy!
